Greek Yogurt Chicken Salad
Ingredients
For the chicken
- 3 Chicken breast skin less
- 2 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper powder
- 1 tsp Garlic powder
- 1 tsp Paprika powder
- 1 tsp Dried oregano
For salad
- 2 Cucumber chopped
- 1/2 Green apple chopped
- 3 Green onions chopped
- 1/4 Red onion chopped
- 2 tbsp Parsley chopped
- 4 Lettuce leaves chopped
- 1/2 cup Almonds chopped
- 1/2 cup Dried cranberries/raisins
For the dressing
- 4 tbsp Mayonnaise low fat
- 1 tbsp Greek yogurt
- 1 tsp Mustard sauce
- 2 tbsp Lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Take a bowl and mix oil, pepper, garlic powder, oregano and paprika together.
- Place the chicken in the bowl and mix until full coated.
- Heat a large pan on medium heat.
- Add marinated chicken and cook for 5 minutes on each side or until fully cooked.
- Remove from the heat and set aside to cool.
- Take a large bowl and add chopped cucumber, apple, cranberries, green onion, red onion, parsley, almonds and lettuce.
- Cut chicken breast into small pieces and add to the salad.
- Make a dressing by mixing all the dressing ingredients together.
- Add the dressing to the salad and mix.
