Greek Yogurt Chicken Salad

For the chicken

  • 3 Chicken breast skin less
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper powder
  • 1 tsp Garlic powder
  • 1 tsp Paprika powder
  • 1 tsp Dried oregano

For salad

  • 2 Cucumber chopped
  • 1/2 Green apple chopped
  • 3 Green onions chopped
  • 1/4 Red onion chopped
  • 2 tbsp Parsley chopped
  • 4 Lettuce leaves chopped
  • 1/2 cup Almonds chopped
  • 1/2 cup Dried cranberries/raisins

For the dressing

  • 4 tbsp Mayonnaise low fat
  • 1 tbsp Greek yogurt
  • 1 tsp Mustard sauce
  • 2 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste


  • Take a bowl and mix oil, pepper, garlic powder, oregano and paprika together.
  • Place the chicken in the bowl and mix until full coated.
  • Heat a large pan on medium heat.
  • Add marinated chicken and cook for 5 minutes on each side or until fully cooked.
  • Remove from the heat and set aside to cool.
  • Take a large bowl and add chopped cucumber, apple, cranberries, green onion, red onion, parsley, almonds and lettuce.
  • Cut chicken breast into small pieces and add to the salad.
  • Make a dressing by mixing all the dressing ingredients together.
  • Add the dressing to the salad and mix.


Serve it as a side dish for any main course.
