Special mutton rezala
Ingredients
- 1 kg Mutton
- ½ cup Soybean oil
- 3 Sticks Cinnamon
- 7 Green cardamom
- 10 Black peppercorns
- 7 Cloves
- 2 Bay leaf
- 2 cups Onion sliced
- 1 tbsp Garlic paste
- 1 tbsp Ginger paste
- ½ tbsp Cumin powder
- ½ tbsp Turmeric powder
- ½ tbsp Coriander powder
- 1 tbsp Red chili powder
- ½ tsp Garam masala powder
- 6 Green chili
- 1 cup Warm liquid milk
- 8 Dried plums
- Salt to taste
- 1 tbsp Ghee
- 1 pinch Screwpine water
For special paste
- ½ cup Sour yogurt
- 1 tbsp Raisin
- ⅓ cup Fried onion
- ½ tsp Nutmeg powder
- ½ tsp Mace powder
- 12 Cashew nut
Instructions
- Take a saucepan, pour oil in it and add cinnamon, green cardamom, black peppercorns, cloves, bay leaf in it and stir it for 30 seconds.
- Then add onions and fry it till it turns light golden brown.
- Now add ginger, garlic paste, chili, turmeric, cumin and coriander powder, salt and ½ cup of water in it and stir it for 10 minutes in low flame.
- Add the mutton, mix it well.
- Then add milk and dried plums, set the flame on medium heat and let the mutton cook properly.
- After 10 minutes add the green chili and garam masala powder then again let the mutton cook.
- After 15 minutes, check if the meat is cooked or not.
- When the mutton gets cooked properly add the special paste and mix it well and set the flame on low heat.
- After 5 minutes add ghee and screw pine water in it and keep it there for 2 minutes.
- Turn off the flame

Serve it hot with paratha or pulao {rice}.
